- 100 g (1/2 cup) brown sugar

- Gingerbread spice:
- 3 tbsps ground cinnamon
- 3 tbsps ground ginger
- 1 1/2 tsps all spice
- 1 1/2 tsps cloves
- 3/4 tsp nutmeg
- 1/8 tsp cardamom
- 1/8 tsps coriander powder
Steps to make to make Copernicus Cake
- Preheat the oven to 180 degrees C. Lightly butter a 900g (2lb) 23cm x 13cm (9†x 5â€) loaf tin and line with parchment. Mix the spices together.
- Put the honey, sugar, butter, orange zest and marmalade in a small pan and warm over a medium-low heat until the butter melts and the sugar dissolves. Remove from heat and set aside to cool.
- Beat the eggs and add slowly to the honey mixture. Add the milk and mix until well combined.
- Stir the flour with the baking powder, baking soda, salt and spices and add to the mixture. Combine but do not over mix. Pour the mixture into the lined loaf pan and transfer to the oven (middle shelf). Bake for 45-50 minutes until the top is golden and a skewer inserted in the middle comes out clean.
- Allow the cake to cool. Cut in half horizontally. Spoon the advocaat over the bottom half.
- Frosting: beat the butter until soft then sift in half of the icing sugar. Beat until smooth then add the remaining icing sugar, advocaat and orange zest. Loosen with a little orange juice until have a spreadable consistency. Using a palette knife spread half of the mixture over the bottom half of the cake, put the top on and use the remainder to decorate the top of the cake. Top with walnut pieces and put in a cool place.
